Chinese Rice

INGREDIENTS

Rice ………………cooked in salted water

Capsicum (red, green and yellow, thin strips) #189;

Black Pepper………………………………..1/2 tsp.

PREPARATION
---------------------------------
Heat oil in a large pan; put red, yellow, and green pepper.
Fry for few seconds than add tomato, salt, pepper, garlic, cooked rice and 1/4-cup warm water. Cover and put the pan on moderate heat for 10 minutes.

Chicken Fried Rice


INGREDIENTS

Chicken Fried Rice
5 tbsp Oil
3 cup Rice ? tsp
Cornflour Salt as per taste
2 tbsp Soya sauce
1 cup Bean Sprouts
100 gm Mushrooms ?
kg Chicken breast
2 Eggs, slightly beaten
A pinch of White Pepper
2 Spring Onions with tops

PREPARATION
----------------
Remove bones and skin from chicken breast.
Cut into small pieces.
Toss together chicken cornstarch, half teaspoon salt and dash white pepper.
In a karahi (wok) heat one tablespoon oil. Add eggs. Cook and stir until eggs are thickened throughout but still moist.
Remove eggs. Wash and thoroughly dry karahi (wok).
Now heat tow tablespoons oil. Add chicken and stir fry until chicken turns white. Add bean sprouts, mushrooms and half teaspoon salt.
Stir fry 1 minute. Remove chicken and drain. Now in two tablespoons of oil add rice and stir fry 1 minute. Stir in soya sauce and dash white pepper.
Add eggs, chicken mixture, green onions with green tops chopped and stir fry half a minute.

Lemon and Chili Rice

INGREDIENTS

1 tbsp of cooking oil
1 tsp of mustard seeds
5 to 7 curry leavesFresh red chilies cut into slices
Half an onion dicedThe juice of one big lemon
1 tsp of lemon grassSalt to taste
4 cups of cooked rice
1 tbsp of (amchur, coriander, clove and cinnamon) powder

PREPARATION

Heat oil in a wok. Add mustard seeds, curry leaves, the fresh red chilies and the onions.
Let the onions turn slightly brown and then add in the cooked rice.
Stir thoroughly and then add in the fresh lemon juice, salt, the tablespoon of the mixed masala powder and the lemon grass.
Keeping mixing until the rice is covered in the aromatic ingredients.
Garnish with fresh coriander leaves. The dish is now ready to serve.

Chicken Biryani, Hyderabadi Style


INGREDIENTS

1/4 cup ghee (clarified butter)

20 whole cloves

9 whole cardamom pods

5 bay leaves

1 medium onion, chopped

5 small green chile peppers

2 tablespoons ginger garlic paste

1 (3 pound) whole chicken, cut into pieces

1 1/2 cups plain yogurt

1 teaspoon salt

6 fresh curry leaves (optional)

3 cups uncooked jasmine or white rice

4 1/8 cups water

1 sprig cilantro leaves with stems

PREPARATION

-------------------------
Soak rice for 30 minutes in enough water to cover; then drain.Meanwhile, heat ghee in a large skillet over medium heat.

Stir in cloves, cardamom, and bay leaves.

Then stir in onion, and cook until soft, 6 to 7 minutes.

Stir in chile peppers and ginger paste. Stir in yogurt, salt, and curry, and then place chicken in pan.

Cook for 20 to 25 minutes, stirring occasionally and turning the chicken pieces, until only about 1 cup of liquid remains.

Mix in rice, water, and cilantro. Bring to a boil. Reduce heat to low, cover, and cook for 20 minutes. Check rice after about 12 minutes; if it is dry, add 1/2 cup water, and continue cooking.

Chicken Cholay


INGREDIENTS

Chick peas……………………..1 can

Chopped onions ……………...2

Tomato…………………………….1 large

Red chilli powder……………..1 tbsp

Turmeric powder………………1 tbsp.

Salt…………………………………….1 tbsp

Garlic-ginger paste…………….1tbsp

Garam masala…………………….1 tbsp

Coriander leaves…(chopped) handful

Chopped green chillies…………2

Oil…………………………………………1/2 cup

PREPARATION

In a vessel, put half cup of oil and fry onions in it until brown.

Then add garlic-ginger paste and green chillies.

Fry for 1 minute and then add the spices; stir for 2-3 seconds.

Now, add the tomatoes and put enough water to allow the tomatoes to tenderize.

When the tomatoes are tender, add chicken and allow the chicken to cook in its own water on medium heat. Let the water dry up.

Drain the water from the chick peas and add them to the cooked chicken. Mix well and cook for a few minutes.

You can also add more water to keep the gravy.Murgh Cholay is ready. Garnish with coriander leaves. Serve with naan or chapatis.

Butter Chicken


INGREDIENTS

Chicken Thighs or Breast (skinless amp; boneless) 400gms

Almonds (grounded)………1/4-1/2 cups

Onion ………………………..1

Garlic (crushed) …………….2tsp

Ginger (crushed) ……………2tsp

Cinnamon ………………….1/4tsp

Red Chilli Powder…………..1-2tsp

Coriander Powder ……………1tbsp

Whole Peeled Tomatoes With Juice 8oz.Tomatoe Paste …………………1tbsp

Plain Yogurt ……………………1/2 cup

Butter …………………………..2-3tbsp.

PREPARATION

Trim and cut the chicken into small cubes, cover and put aside. With a clean knife and board slice the onions into thin wedges (lyonnaise).
Heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it is frothy. Add the onions and the cinnamon to the pan and fry lightly. When the onions are soft, stir in the crushed garlic and ginger. Then add the turmeric, chilli powder and coriander powder, and saut#233; over medium heat. The spices are fried first to release their maximum flavour and this really enhances the dish.

Brazilian Chicken with Pinto Beans


INGREDIENTS

Pinto Beans ............... 1 410g tin

Onion ....................... 1X

Olive oil .................... 2tbsp

Chicken breasts ......... 4X

Red onion ................. 1X

cloves of garlic .......... 2X

Red chilli .................. 1X

Red wine vinegar ....... 2tbsp

Ground cumin ............ 2 tsp

Dried oregano ........... 1 tsp

Juice of half a lime

PREPARATION

------------------
Heat the oil over a low heat in a pan and cook the onions until they have softened.

Add the garlic and cook for a further 2 min to soften.

Remove the onions and garlic from the pan and add the chicken pieces.

Turn the pieces occasionally until they have browned.

Turn the heat up on the pan and return the onions and garlic to the pan along with the red wine vinegar.

When the vinegar has reduced by half add the cumin, oregano, chilli, pinto beans and tin of tomatoes. Mix together and bring to a simmer before reducing the heat and placing a lid on the pan. Cook for 30 min for chicken breasts and 45 for chicken pieces on the bone.

After this cooking time check that the meat is ready, squeeze over the lime juice and serve.

Baked Country Chicken


INGREDIENTS

Butter .............................. 6 tbsp

Flour ................................ 4 tbsp

Light cream ....................... 1 cup

Chicken stock .................... 1 cup

Salt and pepper .................. to taste

Parmesan cheese ................ 1/2 cup

Rosemary ........................... 1/2 tbsp

Dried basil .......................... 1/2 tbsp

Mushrooms ......................... 1/4 pound

Toasted almonds ................. 1/2 cup

Avocado ............................ 1x

PREPARATION

Preheat oven to 350^. In skillet, poach the chicken breasts until tender. Set aside.Melt 4 tablespoons of butter in skillet. Stir in flour and cook for 3 minutes. Slowly add cream and chicken stock, stirring until smooth and thickened. Season with the salt, pepper, Parmesan cheese and herbs. Set aside.Saute mushrooms in remaining 2 tablespoons butter. Place the chicken in a 2 quart casserole and top with mushrooms. Sprinkle with salt and pepper. Pour sauce over and bake, uncovered, for 25 minutes. Remove from oven. Sprinkle with almonds. Return to oven for 10 minutes.Peel and slice 1 or 2 avoca

Balti Chicken


Balti Chicken


INGREDIENTS


4 tbsp Curd
1" Cinnamon
4 Cardamom
120 ml Cream
5 tbsp Corn Oil
2 Chillies, dried
2 Onions,
diced Salt as per taste ?
tsp Kala Zeera
2 flakes of Garlic
1 tsp Chilli powder
2 tsp Garam Masala
6 whole Black Pepper
2 tbsp Coriander leaves
675 gm Chicken, boned ?
1/4 tsp Grounded Cloves
1 tbsp Almonds, grounded


PREPARATION----------------

Mix the curd, cumin, cardamoms, black pepper, garam masala, cinnamon, ground almonds, garlic, ground cloves, chilli powder and salt in a medium mixing bowl.
Add the chicken pieces leave to marinate for about 2 hours.
Heat the oil in a large karahi or wok. Throw in the onions and fry for 2-3 minutes.
Pour in the chicken mixture and stir until it is well blended with the onions.
Cook over a medium heat for 15-20 minutes or until the sauce thickens and the chicken is cooked through.
Add the chillies and fresh coriander, and pour in the cream.
Bring to the boil and serve garnished with more coriander.

INGREDIENTS


3 cups sliced mushrooms


4 skinless, boneless chicken breast halves


2 eggs, beaten


1 cup seasoned bread crumbs


2 tablespoons butter


6 ounces mozzarella cheese,


sliced 3/4 cup chicken broth





PREPARATION



Preheat oven to 350 degrees F (175 degrees C).
Place half of the mushrooms in a 9x13 inch pan.
Dip chicken into beaten eggs, then roll in bread crumbs.
In skillet, melt butter over medium heat.
Brown both sides of chicken in skillet.
Place chicken on top of mushrooms, arrange remaining mushrooms on chicken, and top with mozzarella cheese.
Add chicken broth to pan. Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.

Basil Grilled Chicken

INGREDIENTS

Coarsely pepper .................... 3/4 tbsp

Chicken breast ...................... 4x

Melted butter ........................ 1/3

cupBasil leaves ........................... 1/4

cup Butter .................................. 1/2

cupFresh basil ............................. 2 tbsp

Parmesan cheese .................... 1 tbsp

Garlic powder .......................... 1/4 tbsp

Salt ....................................... 1/8 tbsp

Pepper .................................... 1/8 tbsp

PREPARATION

Press 3/4 teaspoon coarse pepper into chicken breast halves. Combine 1/3 cup melted butter and 1/4 cup chopped basil; blend well.
Brush chicken lightly with basil and butter mixture.
Combine 1/2 cup softened butter, 2 tablespoons chopped basil, Parmesan cheese, garlic powder, salt, and pepper in a small bowl.
Beat until mixture is well blended and smooth.
Transfer to a small bowl; set aside.
Grill chicken over medium coals for 35 to 45 minutes, turning and basting frequently with remaining melted butter mixture.
To test for doneness, pierce with a fork; juices should run clear.
Serve grilled chicken with basil butter mixture.
Garnish with fresh basil leaves, if desired.

Ingredients
  • 16-20 chicken wings
  • Juice of 2 large oranges
  • 1Tbln soy or fish sauce
  • Several good shakes of black pepper

Method


- Preheat oven to 170C° (350F°)

- Oil a roasting pan and spread chicken wings in it.

- Mix orange juice, sauce and pepper, then pour over chicken wings.

- Bake uncovered approximately 1 hour, turning occasionally.

Serves: 4-5

Preparation time: 10 minutes

Easy Chicken Curry



So easy… so sorry to say it again, easy, easy EASY… and quite delicious.








Ingredients
  • 500g chicken breast or thigh fillets, sliced
  • 1 large onion, roughly chopped
  • 2 cups broccoli florets
  • 1-2 tspn curry powder or paste (adjust to your liking)
  • 270ml can coconut milk
  • 2 tspn fish sauce, or to your taste (careful, very salty)
  • Juice ½ lime or small lemon
  • Oil for cooking


Method

Heat oil in large pan

- Brown chicken and set aside

- Add chopped onion and cook 2-3mins

- Return chicken to pan, add curry and coconut milk

- Simmer for 10min

- Add broccoli and simmer 2-3 minutes

- Season to taste with fresh lime juice and fish sauce.

Serves: 2-3

Preparation time: 20 minutes

How to Be Funny Without Telling Jokes


Here's how to find humor in not-so-funny stuff. Before long, you'll have people laughing a lot at your presentation without telling jokes.

Below are some ways to get people to laugh.
Steps.:




  1. Set the scene for laughter. If you want to lighten up your program,you might want to let the audience know this, even before you say one word. Project some lighthearted visuals as the audience is entering the room. Play some uplifting music as they enter. Or, add some humor to your presentation title or program description. Your bio, for example, can have a list of accomplishments, playfully followed by "His mother is very dissapointed in him."


  2. Facial expression is a big part. In a funny situation where everyone is laughing, try hard to look blank, like you don't know whats happening. You get laughs, and all eyes are on YOU. Don't be scared. Some people like staring at other people unexpectedly- that cracks up laughs.


  3. Poke fun at yourself. Again, even before you open your mouth, you can show the audience that you don't take yourself too seriously by adding some playful things about you in your introduction. For example, have the introducer tell the audience that you are the author of seven books which have sold well over 3 copies. Then the person corrects their mistake and says, "Oops, that's 300000 copies." Or go wild, put it the other way around.


  4. Get some laughs with a prop. It has been said that learning is enhanced with visual aids. If this is true, then speakers need to enhance their talks with something to visually illustrate what they are saying. A prop is a great way to do this because it not only makes your message memorable but it can also get a laugh. Use balloons to illustrate how people can let go of their stress or an inflatable globe to illustrate how we often carry the world around on our shoulders. All make a point and all get a laugh.


  5. Tell your humorous stories. Open your humor eyes and ears and look and listen for the funny things that happen all around you. Families are an especially good resource for finding humorous stories. One such story involves the author's 93-year-old mother. Every time she goes to the doctor, she hires a van service to take her there and back. One late afternoon, it didn't show up to take her home. Since the doctor had to close the office for the day, he suggested that she wait for the van in the pizza parlor next door. After waiting a long time without the van arriving, she went up to the counter and asked, "Do you deliver?" When the man behind the counter replied, "Of course, we do. We're a pizza place." She said, "Great. Then I'd like a pepperoni pizza and I'd like to go with it."


  6. Borrow some witty words. While waiting for your own humor-related stories to appear, you might want to borrow some funny short quotes from famous people to lighten up your talks. Quotation books, the TV, newspapers, and magazines such as Reader's Digest are great resources for locating great quotes. For instance, if you frequently speak to hospice groups, Woody Allen's comments about death and dying are appropriate (e.g., "There are worse things in life than death. Have you ever spent an evening with an insurance salesman?") Quotes and one-liners from movies and TV shows often work, but make sure they are not too dramatic or well known. Studying sitcom characters like Chandler Bing from Friends will get you in the mentality of a naturally funny person.


  7. Collect audience anecdotes. Sometimes audiences say the funniest things. When they do, write it down. It could be a big laugh in your next presentation.


  8. 'Remember the bottom line'. For non-humorists, some of the ideas presented here may seem too frivolous for your subject matter. Nevertheless, you are still encouraged to seek some way of upping the entertainment value of your talks because it might also increase what you can charge. As Steve Allen once noted, "People will pay more to be entertained than educated".


  9. Make it relevant. One final word about using humor in your presentations--make sure it is relevant. Amusing an audience for the sake of getting a laugh might be ideal for a stand-up comedian or an after-dinner humorist but it's probably not good for most speakers. If your humor doesn't make a point or have a purpose, don't use it.


  10. Fake stories Usually real comedians use fake stories to make a cheap laugh. Kind of like Brian Regan uses the "Stupid in school" joke. Even though it's a fake story, he made it up and the audience still laughed at it.

Warnings.:



  • Be careful while poking fun at yourself. Don't destroy your credibility, or else no one will take the rest of your presentation seriously.

  • Do not dress funny for a presentation. That is a surefire way for people not to take what you say seriously. You should be able to make people laugh and still get your message across. If you look like a clown you will be perceived as a clown.

  • Be very careful when using topical or political humor. If you don't know what you're doing, there is no quicker way to completely alienate your audience. If no-one gets it, say something like, "Trust me, that would have been really funny if we were French."

  • Race and religion jokes are usually out of bounds -- know your audience! So you might go home with a black eye the next time you make a racial joke.

  • It's OK to take a quote from a TV programme/film now and again but not too often! Otherwise, people will think that you can't think of anything funny to say yourself. And if you do borrow someone else's quote, SAY you've borrowed it. If you pretend it's one of your own and the person you say it to recognises the quote as someone elses, you won't come out of that situation very well!

  • Exaggerate, but don't over do it. Exaggerate what you're saying, not how you say it.

  • DON'T REPEAT YOUR JOKES TOO MANY TIMES, this will seem like that was the only thing you can say funny and you can even seem annoying!

  • also, if you repeat too many times, it will seem like you got it from someone, and part of comedy is that its your own ideas making other people laugh:D
