Easy Chicken Curry



So easy… so sorry to say it again, easy, easy EASY… and quite delicious.








Ingredients
  • 500g chicken breast or thigh fillets, sliced
  • 1 large onion, roughly chopped
  • 2 cups broccoli florets
  • 1-2 tspn curry powder or paste (adjust to your liking)
  • 270ml can coconut milk
  • 2 tspn fish sauce, or to your taste (careful, very salty)
  • Juice ½ lime or small lemon
  • Oil for cooking


Method

Heat oil in large pan

- Brown chicken and set aside

- Add chopped onion and cook 2-3mins

- Return chicken to pan, add curry and coconut milk

- Simmer for 10min

- Add broccoli and simmer 2-3 minutes

- Season to taste with fresh lime juice and fish sauce.

Serves: 2-3

Preparation time: 20 minutes
